Hi everyone! Here we are at the end of another week, which of course means another batch of bentos!
November 30
The first bento of the week features some tasty Chinese takeout leftovers! There in the middle is some great shrimp fried rice. There's half of a pork and veggie eggroll with sweet n' sour sauce in the front, along with some blanched baby asparagus. In the back I've got some kiwi slices and pomegranate seeds, but what's that other thing you ask? It's sweet potato paste; a cool culinary find from my local Latin market!
December 1
We recently got some dried morel mushrooms from our friend Josh, and Steve was instantly coming up with great ideas to use them! He bought a rotisserie chicken, made some cornbread stuffing, and whipped up a savory morel mushroom gravy. I brought some leftovers in my bento lunch the next day with a colorful salad and some pomegranate seeds. Good work, Steve, and thanks again for the mushrooms, Josh!
December 2
Here's another bento made of tasty leftovers! That burger was to die for, with blue cheese, the last of the back bacon (that I'd used in the mussels dish I made last weekend), red onion, sauteed mushrooms, and lettuce... all on a pretzel bun! After that, I wanted to keep the rest of the bento simple, so there's just cherry tomatoes, sweet tangerine wedges, and pomegranate seeds. Quite a filling lunch!
December 3
This last bento of the week was probably my favorite. Shells and goat cheese, one of my favorite twists on classic mac n' cheese, is adorned with kalamata olives. Then there's "two hearts" salad: artichoke hearts, hearts of palm, red onion, tomatoes, cucumber, parsley and a simple dressing of olive oil and red wine vinegar. In the back is more tangerine wedges, along with dates and raw almond butter with a swirl of honey to dip the dates into.
Here in Chicago we just got our first snowfall, and temperatures are supposed to be dropping tomorrow, so hope everyone stays warm out there! And of course, make some awesome bentos! See you next week! ^_^

It sure has, Jenn. It's funny.. it got rather cold right on December 1st, and then we got our first snowfall just the other day. As much as I don't like the cold, I'm so thankful it waited till December.. and we actually had an autumn! Usually it seems it just goes from 80 degrees to -30!
